Babies love the tactile, finger-food experience of eating mini pancakes, and this recipe is a great way to make use of overripe bananas to add natural sweetness, rather than refined sugar. If you like, you can also add in a few chopped sultanas or raisins to the batter for some extra fruity fibre.

Worried about using cow's milk? Official NHS guidance states it's fine to use milk in small amounts in your weaning recipes, whether your baby is mainly breastfed or mainly formula-fed.

Ingredients

  • 1 egg
  • 175g Greek yoghurt
  • 50ml full-fat milk
  • 100g self-raising flour
  • 1 overripe banana, peeled and mashed
  • 1 sweet eating apple, peeled, cored and grated
  • sunflower or vegetable oil, for cooking
  • seasonal fruit, chopped, to serve

Method

  • STEP 1

    Crack the egg into a bowl and whisk with the yoghurt and milk.

  • STEP 2

    Sift in the flour and whisk until smooth. Add the mashed banana and grated apple and mix the batter well.

  • STEP 3

    Heat a little oil in a large frying pan. Spoon small amounts of the batter into the pan. Fry for a few seconds, until bubbles appear on the surface.

  • STEP 4

    Flip over and cook on the other side for 1 minute until lightly golden. Serve with chopped seasonal fruit.
